Horseradish and Beets

This is a take on the Eastern European recipes that I found after a request.  No harsh aromatics, sweet mellow beets tone down the robust flavor of the horseradish.  Great with corned beef, boiled dinners, pork, even prime rib.  You decide what you want to use it on.
